Thursday~Hamburgers, tater tots and fruit

Friday~Pot Stickers, rice

Saturday~Out

Sunday~Fish, mac&cheese, veggie, macrons

Menu Plan

I am back and I am going to try my hardest to post more often than let's say every 2 months. :) My life just got crazy busy and it was hard to find the time when I arrived home. All I wanted to do was fall into bed.

Anyways, here is my menu plan for the week:

Monday-Beef Stir Fry with Asian Noodles
Tuesday-Sliced Beef with Mashed Potatoes
Wednesday-a quick bite before baseball practice
Thursday-Roasted Turkey Tenders with Gravy and Mashed Potatoes
Friday-Oven Baked Chicken Breast, Mac and Cheese and Steamed Veggies

All of my meals are from Schwans. I am enjoying the convenient freezer to oven dinners.

Menu Monday

I can't believe it's already Monday! We had a fabulous weekend in San Antonio visiting Sea World. We can't get enough of that place. One of the shows that we saw was about creepy creatures-snakes, spiders and the like. My son and his cousin were asked if they would like to volunteer and come up on stage to hold an animal before the start of the show. Being boys they agreed right away.




Here is my menu for the week:

What a gorgeous weekend! The weather was absolutely beautiful. Spring is on its way here. We have a busy week. Lots of deadlines due at work and the start of baseball season which entails lots of practices. Here is our plan:

Monday-Out due to baseball

Wednesday-Lasagna, salad and garlic bread
Thursday-Out due to baseball

Menu Planning



What a great holiday weekend we had. We were able to escape town and head out to the country and have some old fashion fun on my sister's family land in Calvert, TX. We have no left overs since I didn't host Thanksgiving and make the turkey. We have a busy week ahead of us so I tried to find easy meals to make. Here is our plan for the week:




Monday:Out since I have a training until 6:00!


Tuesday: Sausage and Pasta Bake


Wednesday: So Simple Tuna Pasta Casserole


Thursday: No Roll Mexican Rice Enchiladas


Friday: Garden Vegetable Lasagna


Saturday: Impossibly Easy Chilies Rellenos Pie

Menu Planning


We had a fabulous weekend. My brother came down from Missouri to surprise our mom for her birthday. We had him meet us at the restaurant Friday evening. He was sitting at our table and she was surprised! It was great having him here this weekend. The kids enjoyed hanging out with Uncle. Saturday we went to Chappell Hill for the Scarecrow Festival and enjoyed the cool day walking around and enjoying the arts and crafts. I have the day off today and plan to spend the day hanging with my son.

Menu Planning

Having a menu plans helps take the stress out of what's for dinner. I have a peace of mind when I use my plan and follow through. Sundays are my days to plan and shop for the week. These week I have simple and easy meals that can be quickly assembled since I am working late this week.

Menu Planning


We enjoyed our weekend. Saturday was filled with baseball and family. The pool is open for the weekends in May and we spent time splashing around.
Our menu is carrying over meals from last week that didn't get made. Shame on me! I was too tempted by going out with friends and family. DH is working most of the week so its just our son and I for the most part.
Here is our plan:
Monday~Meatloaf, mash potatoes and broccoli(from last week)
Tuesday~Glorified Chicken(a Campbell's recipe) mac and cheese
Wednesday~Subway after baseball practice
Thursday~Leftover chicken from Sunday and a vegetable
Friday~Frozen pizza and salad.

Menu Planning Monday

I had a fun filled long weekend. I took a personal day Friday and went to the scrapbook convention here in my town sponsored by Creating Keepsakes. There were so many things even though it was smaller than the last time they here. I didn't take any classes because I have so many packets from the last one to complete. I did shop until I dropped. There isn't a great scrapbook store near me, except for Michael's and Hobby lobby, so it was fun stocking up on new and fun items.



My son had another game on Saturday and they won!!! He pitched two scoreless innings again. His next game is Thursday against a tough team. Right now we are in first place for the division and we want to stay there!



This week DH is home and not working evenings so I have to cook more. I have some new things to try and I am looking forward to trying them.

Tuesday~Pork Chop Stuffing Bake and broccoli and cheese

Wednesday~Chicken with 20 cloves of garlic, carrots and potatoes

Menu Planning Monday

What a weekend! The weather was absolutely crazy! It started raining Friday til Saturday late afternoon, causing severe flooding in certain parts of my city. There were severe thunderstorms with wind, hail and tornado watches/warnings. Here are a few pictures of the front and back of my house on Saturday.

Friday night I took son over to the batting cages so he could practice his swing. I was impressed with the facilities at Baseball USA. I haven't been inside because dad usually takes him. His game was cancelled on Saturday so we went back over to the batting cages to practice hitting again. When we left there Saturday it was terrible getting home from all the flooding but we managed.
After the rain stopped we headed out to the movie theater to see Hannah Montana the movie with my sister and her kids. It was a cute movie and I cried! My son was embarrassed that I cried but I cry at just about anything.
Sunday we had the make up game. The Grizzlies won the game we have won every game we have played. My son was the starting pitcher and pitched two scoreless innings. I am so proud of him and so were his grandparents that came to watch. Tonight we have another game against a great team. Go Grizzlies!
Since it will just be me and my son this week for dinner since husband is working, I decided to keep it easy.

We had a fun and busy weekend. We enjoyed the three days with family and friends. Pictures are coming soon!


This week is somewhat busy. We have a baseball game, practice and school music program. And then a full weekend! I am looking forward to the lazy days of summer already.

Menu Planning


What a fabulous weekend we had. Friday night we went to the Rice vs Memphis baseball game. I love the atmosphere at the university ball park. The Rice Owls ended up losing but we had a great time. Saturday our son had a baseball game and they won 11-2. His team has won their first two games! Our son pitched two scoreless innings. We are so proud of him! Saturday we attended a family wedding. It was a beautiful event. The reception was filled with food, dancing and drinking! The bride was Greek so it was interesting to learn some new customs and dances!

Monday: Chicken Caccitore and so sort of vegetable

Tuesday: Spaghetti and so sort of vegetable

Wednesday: Out after sons game

Thursday: Pizza and salad

Friday: Mom and son date night. He gets to pick!

We had a fabulous weekend. Spending time with family and friends is so therapeutic for me. We had a baseball scrimmage game and the boys did quite well. We have another one tonight and practice on Wednesday so my menu is sparse since we will be eating on the run or late.

Menu Planning


We had a full weekend with a stamp camp, baseball clinic, baseball practice and shopping. My sweetie treated me to a shopping spree at Coldwater Creek and then dinner at PF Chang's. Our week looks full of the same old same old. Nothing spectacular happening here. I did talk with my mom over the weekend and she has scheduled her knee surgery the first part of June and therefore my parents will not be able to go to Pennsylvania with us. I am a little disappointed but I know she needs the relief of the surgery.

Menu Planning

Our son had try-outs for Spring baseball this weekend. He did very well. No we have to wait for the e-mail or phone call as to what team he will be on and with which friends. I was able to go to a new store, Swoozies and shop till I dropped. Also, we went to the Country Peddler Show and found a lot of cute Valentine items and a gift for our sons teacher. Also, we ate at the Cheesecake Factory but were too full for cheesecake! Overall it was a good weekend!

What a busy and fun weekend! Our church celebrated it's 75th anniversary. Lots of friends came with their new families. It was great catching up on each others life.

Menu Planning and Another Carnival

What a weekend! We were busy from the time after work on Friday to Sunday evening. We had fun at my sisters church out in Fairfield trunk or treating. Saturday we rose early in the morning and headed to Canton, TX to shop First Monday Market Days and it was crowded! Then drove over to Tyler, TX to stay the night and Sunday shopped a little bit more in Tyler and then played at Fire Mountain Amusement Park and then headed back home. I am tired even though I had an extra hour of sleep!

Nothing fancy this week since I need to run to the store after work. Here is our plan:
